         Why Fresh Milled Flour?

         I recently started milling my own flour! You may not have even known that was a thing.....I didn't either until I listened to a podcast featuring Sue Becker from Bread Beckers. On this podcast, I learned about the history of white commercial flour and how so many nutrients are stripped away in the process of creating it. There is just no substitute for whole grain flour freshly milled in your own kitchen and then used in your baked goods. If you're like me, maybe you've wondered how many cultures virtually lived on bread in ancient times. After listening to this podcast, it all made so much sense! The store bought flour we use today is nothing like what was used then - full of B vitamins, Vitamin E, and fiber.

          In April, I asked for a mill for my birthday, ordered some organic wheat berries, and have been baking up all kinds of delicious goodness for my family using fresh milled flour. Many of my friends have been asking me to share the recipes I've been using so I thought I'd compile the links all in one place to easily share them.  (Little off topic from my typical Country Pumpkins posts, but this is the blog platform I have, so I'm going with it! ha!)

          Keep in mind, I'm still new to this and am not an expert by any means.  :) I do share tried and true recipes by people I DO consider to be experts though. My family has loved all of these!

            My Tips for Using Fresh Milled Flour:
           &#xD;
      &lt;/b&gt;&#xD;
    &lt;/font&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;ol&gt;&#xD;
      &lt;li&gt;&#xD;
        
            While you can modify your regular recipes to use fresh milled flour instead, starting out, I recommend using recipes made exclusively for fresh milled flour. There are lots of great ones out there on Pinterest and blogs.
           &#xD;
      &lt;/li&gt;&#xD;
      &lt;li&gt;&#xD;
        &lt;span&gt;&#xD;
          
             Know your wheat. I'd start out with at least hard white, hard red, and soft white so you have what you need on hand for creating a variety of recipes. Hard wheat has a higher protein content and is what you need for yeasted or sourdough breads. Soft wheat is best suited for cookies, cakes, and biscuits. There are MANY other varieties of "ancient grains" to try as well but to start out, I'm keeping it simple with these basics.

             Follow some fresh milled flour bakers on Facebook and join their groups! Lots of helpful info and recipes are shared there.

               Fresh Milled Sourdough

              - Sourdough has been the trickiest thing I've tried with fresh milled flour so far. Not that the recipe is hard. It's actually VERY easy and quite fast for sourdough. Freshly milled flour ferments much more quickly than commercial flour. You end up with a more dense loaf with less oven spring, but it is moist and delicious. My family still prefers this over yeast bread. For this recipe by Grains in Small Places I bulk ferment for 4 hours then bake immediately with no cold retard. I also spend a few minutes doing pinch and folds when I first mix the water, flour, and starter and THEN do a couple minutes of slap and folds after the autolyze when I mix in the salt. So far, this has given me the best oven spring out of other recipes and methods I have tried. I prefer 100% hard white wheat for this. I converted my regular starter over to fresh milled by simply switching over to feeding it fresh milled flour. No issues. Just in case though, I'd recommend keeping back some regular starter for a short while.

             1 tsp. Salt
            &#xD;
        &lt;/li&gt;&#xD;

             1 tsp. Baking Soda

             1/2 t. Garlic Butter Seasoning (garlic powder would work too)

              Directions: Mill flour. Mix together milled flour, baking powder, salt, and 1/2 t. garlic powder. Stir in olive oil and milk. Next add in 2/3 c. shredded cheddar cheese and stir. Drop by tablespoons onto a greased cookie sheet. Bake at 425 degrees for 15 minutes or until light golden brown. Remove from oven and brush with mixture of 3 T. melted butter and 1/2 t. garlic butter seasoning. Makes about a dozen.

           Recently we found out that our county offers a grant for 4-H aged kids to receive partial funding for special horticulture / agriculture projects. Our daughter, Caroline, applied for the grant and was accepted!
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;

    &lt;/span&gt;&#xD;

  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           She will be using this grant (with dad &amp;amp; mom's help) to start a u-pick apple orchard here at our farm!!! We've been dreaming about growing apples for a while (this is actually a very common request that we get), and it seems it's finally all coming together. We plan to plant 140 dwarf apple trees this spring. From what we understand, they should be ready to harvest in 3-4 years if all goes well.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
      
           We should be getting the trees and planting them within the next couple weeks to a month. We're excited to share the whole experience with you! Stay tuned!

            Our sunflowers are a little ahead of schedule! We weren't planning to open early for sunflowers, BUT this perfect field of ours is just TOO GOOD to miss any of the blooms! We will be opening our sunflower field starting Saturday, August 31st through September 5th on select days and times.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Once we reach our Fall Festival opening day on September 7th, you can visit the sunflower field without a special timed ticket any time during our business hours for $5 (not sure how much longer that field will be in bloom by the 7th - likely a week or less). If you want to experience the sunflowers at their peak for photos, etc, we recommend visiting during these designated Sunflower Days from 8/31 - 9/5.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

      &lt;span&gt;&#xD;
        
            We do not have any photo spots set up in this field, BUT it's beauty speaks for itself.

    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            We estimate this field contains 37,000 blooms!!!
           &#xD;

            Average plant height is 4.5 - 5.5 feet tall.
           &#xD;

            You can arrive any time during your ticket window, please note the gate will close and be locked at the end of the ticket time.

           On Saturday, September 7th at 10:30am we will be having a butterfly release! You'll get to release a Painted Lady Butterfly (or two or three....purchase as many as you want!) in our gorgeous sunflower field.

  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Step 1: Select how many butterflies you want. Cost is $8 per butterfly.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Step 2: Purchase either a $5 corn maze ticket* OR a $22 Fun Pass* for each member of your group.

            We are so excited to finally reveal the mural we added to our new Adventure Barn! A lot of thought and planning has gone into how we would use this new barn, but we knew early on that we wanted to include a mural. (To read more about building our Adventure Barn, click

    &lt;/span&gt;&#xD;

    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;

            &#xD;

        &lt;br/&gt;&#xD;
        
            We were torn between going with a picturesque farm scene or a fun cartoon style. Ultimately we decided to cater to the kiddos since our new Adventure Barn where the mural is located is a play place for kids!
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Here are some of the stats:
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;ul&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            The mural is 8 feet tall by 16 feet wide.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Many hours were spent planning the design and buying the painting supplies.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
    &lt;li&gt;&#xD;
      &lt;span&gt;&#xD;
        
            Shelley completed the painting in 45 hours over 10 days in early July.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/li&gt;&#xD;
  &lt;/ul&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Here's a look at the process.......
          &#xD;
    &lt;/span&gt;&#xD;

           First, Matt and Andrew screwed 4 sheets of primed plywood to the barn wall to create a "canvas" for the mural to be painted on.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
&lt;/div&gt;&#xD;
&lt;div&gt;&#xD;

            To keep this painting from looking like a 5-year-old's art project, I projected my design that I created on Canva onto the plywood. Matt and I worked together to trace the basic elements of the design using chalk.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
&lt;/div&gt;&#xD;
&lt;div&gt;&#xD;

           After tracing, it looked like this! (I painted all the background grass and sky then came back and traced all the animals later.)

  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;

            Next, I gathered all my painting supplies. I start with some basic colors: white, black, brown, orange, red, yellow, green, and blue and then mix all the other colors I need from there. I also stocked up on
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
    &lt;a href="https://a.co/d/2dvfvr7" target="_blank"&gt;&#xD;
      
           my favorite paint brushes.
          &#xD;
    &lt;/a&gt;&#xD;
  &lt;/p&gt;&#xD;
&lt;/div&gt;&#xD;
&lt;div&gt;&#xD;

           This is where I ended up after 18.5 hours of painting. At this point, I traced on the animals which were next!
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;

&lt;div&gt;&#xD;

           The next day I heard a sound behind me while I was painting. I was shocked to see that our baby goats Jacob and Esau had escaped their field, jumped onto the hay wagon that I had all my painting supplies on, and were hopping around checking it all out. Jacob ended up with white paint on his nose! A hilarious memory for sure. :)
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
&lt;/div&gt;&#xD;
&lt;div data-rss-type="text"&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           These cartoon animals took tons of time, but turned out so cute - especially since I've never painted anything like that before!
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
&lt;/div&gt;&#xD;
&lt;div data-rss-type="text"&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Again, the final result! We aren't *completely* done with this spot though.......
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           Coming soon, we will be adding a large piece of artificial turf in front of this mural, creating a little corral area, and filling it with cute little "farm hoppers" that little kids can bounce around on! (see below)
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;

            Several years ago, I (Shelley) spotted this old barn door leaning up against the wall in our old "hay shed". I was determined that it needed to be a photo spot some day but we never made it happen.....until now.
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            When he was cleaning out the hay shed as part of the remodel process this spring (you can read about our barn remodel in this

           Matt cut some rotted wood off the lower part of the door,  then pressure washed off 30 years of cow manure, dirt, and grime. THAT was quite the transformation which you'll see in this video!
          &#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;

      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
&lt;/div&gt;&#xD;
&lt;div data-rss-type="text"&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           I have been wanting to paint a butterfly photo spot for a while, so that's what I decided to use this door for.....our Butterfly Barn Door.  This painting was completed in approximately 30 hours over 3 very hot weeks in June. PSA: Barn wood is VERY hard to paint on!!!  The rough texture definitely made it more challenging and time consuming than it would have been otherwise, but ooooh what a result.
          &#xD;
    &lt;/span&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;span&gt;&#xD;
        
            ﻿
           &#xD;
      &lt;/span&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;

    &lt;span&gt;&#xD;

      <title>2024 New Additions: Barn Remodel</title>

           If you've been to our farm, you've most likely noticed this nasty old barn out near the gravel lane. You know, when you look at something long enough, sometimes you don't notice it anymore. That's what happened to us. Ha!
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           By the end of last season, we knew we needed to give this structure some attention because it was falling into serious disrepair and we might lose it if we didn't fix it.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           What you may not know is that while this farm has been in the immediate family since 1994, before that it was owned by Debbie's parents (the Penningtons) for many years. We learned from Debbie that this hay shed building was built in two parts. The first, older part was actually built in a different location on our farm and MOVED to its current spot. It was used as the first milking parlor on this farm when Dean and Debbie moved to the farm in 1994.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           When Matt was a teenager, his dad caught him trying to rig up a spot outside the original structure for his show cows. Soon, he added the newer half of the barn as a show cow barn.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      
           As we began looking over the barn this winter, we realized the old half (left side) of the barn was beyond saving. Check out this video to see how easily it came down....

    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;

           After the demo, there was a lot of clean up to be done, as well as removing the old metal and siding from the half of the barn we saved. This is all that was left......we also tore off the metal roof and replaced it too.
          &#xD;
    &lt;/span&gt;&#xD;
  &lt;/p&gt;&#xD;
&lt;/div&gt;&#xD;
&lt;div&gt;&#xD;

           The new part of the barn was framed.
          &#xD;

           We decided on red metal siding, a gray metal roof, and white trim.

           Matt even made all of Shelley's dreams come true and added a cupola and weather vane to the barn! Any other cupola lovers out there?

&lt;div&gt;&#xD;

           Both houses are situated in a former cow pasture on our 250 acre dairy and pumpkin farm. They feature breath-taking sunset views and the peaceful tranquility that only the country can offer.

           We are so excited about this addition! Our bonfire area is getting a major glow-up complete with a stacked rock fire pit (with rock we gathered from our own creek!), reclaimed wood benches, sun shades, and string lights. This area is almost complete. Watch for final reveal pictures on our social media soon! We look forward to utilizing this area as seating during the day since it's located in an area where many gather to watch their kids play on the Hay Pyramid and wait for the Barrel Train ride. Then of course at night it is completely magical with those string lights and bonfire. We have several night events planned where you can come enjoy this new spot, and a couple of things in the works still too:

            Last year, we had a temporary petting zoo at our Pumpkin Ridge attraction. It was such a huge hit that we've decided to build a permanent petting zoo out there! This petting zoo will require a

            ($25 per family) in order to access it. We will have goats and some other cute animals in pens that can easily be petted and enjoyed in this area. While we are very excited to share this new petting zoo with you, never fear, we will still have our regular FREE field of farm animals with goats, donkey, and mini horse available up in our main area.            We are working hard preparing for this upcoming fall season! Did you know we begin planning for the fall in the early spring each year? It's always our goal to keep improving to make our pumpkin patch the best it can be! Thank you for continuing to support our family business each fall. For about 6 months a year, we eat, sleep, and breathe Country Pumpkins as a family. It is all-consuming, but what a fun business to pour ourselves into! We are thankful!

           How would you like a sneak peak of the new additions that are coming this fall? Here's what we're doing to make sure your Country Pumpkins experience is the best ever this year!

      &lt;br/&gt;&#xD;

           - New 60'x84' PICNIC SHELTER is being built here in mid-July! This will serve as extra seating for our guests, house large group events, and more! We can't wait to reveal the details about this new space. Stay tuned, you're going to love it!

  &lt;/p&gt;&#xD;
  &lt;p&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

  &lt;p&gt;&#xD;

           - New PETTING ZOO! This will be a much larger area than what we currently have. It will allow us to have more animals and more room for them to run and play. More guests will be able to enjoy them at a time. It's going to be a great addition!
